Very good points. I think it would be much more truthful to understand math as emergent with the processes and patterns it models, than as some platonic realm, yet the human mind is designed to extract signals from the noise, so the tendency to make assumptions when the evidence is less than clear is overwhelming for social status. Clear answers are preferable over fuzzy truths.
